Hi friends,
I don’t know about you, but, for me, THE dessert choice of the summer are s’mores. There is literally nothing better than gathering around a campfire with friends, telling stories, singing songs, and roasting perfectly golden-brown marshmallows for s’mores.
My favorite dessert every other time of the year are brownies. Brownies are legitimately the best and anyone who says otherwise are sad and wrong. ;) Since I’m getting my house in a summer-y mood, I thought it’d be appropriate to share a summer-y recipe with yinz too.
I decided to combine my all time favorite dessert (brownies) with my all time favorite summer dessert (s’mores) to create these oh, so delicious s’mores brownie pops! I was a little curious what I would use for the marshmallow flavor for my brownie pops, and then I learned that Wilton had marshmallow flavored melting chocolates. Score! And then I learned that those were limited edition and weren’t around right now. I was bummed and didn’t know how I could substitute it. And then I found this:
This is marshmallow flavored ice cream topping and, let me tell you, it tastes like delicious, liquefied marshmallows. Ok, that sounds gross. But that’s the only way I know how to describe it! (And no, this isn’t sponsored. It’s just delicious.) It was the perfect marshmallow flavoring for my brownie pops, but it was a bit too sticky and wouldn’t harden like I thought it would. But have no fear! I had a dream of s’mores brownie pops and s’mores brownie pops I would have!
Supply List
- your favorite brownie recipe
- Smucker’s marshmallow ice cream topping, 1/8 cup
- white chocolate morsels, melted, 1 cup
- graham crackers, crushed
- pretzel rods
- Hershey’s chocolate bar (optional)
Instructions
- Bake your brownies according to the recipe’s instructions. Let completely cool.
- “Fluff” the brownies up with a fork, and roll into bit sized balls. Place the balls on a baking sheet lined with wax paper and refrigerate for hour.
- Melt the white chocolate morsels completely. Mix in the marshmallow ice cream topping until smooth. You may need to pop the mixture back into the microwave a couple times to ensure that it stays at the proper melted consistency.
- Coat the brownie pops in the chocolate/marshmallow mixture and place back on the wax paper.
- Sprinkle with crushed graham crackers and stick a pretzel rod into it. This will act as the lollipop stick.
- For extra garnish, add a piece of a Hershey’s chocolate bar to the top of the brownie pop.
- Pop back in the fridge until ready to serve!

These turned out exactly how I wanted! It’s a perfect addition to any summer party you’re planning, or even just to make for a night in. ;)
