Alrighty friends, are you ready for the best, sweetest, sugar-coma-inducing candy ever? Good, because you came to the right place. This is my favorite candy recipe ever because 1: it’s delicious, 2: it’s unique, 3: it uses up holiday dinner leftovers, and 4: it’s the easiest recipe ever!
“Hold up there, Chelc. What do you mean it uses leftovers?”
You read right folks. This candy is made with…are you ready for it?…MASHED POTATOES! My family has been making this candy since before I was born. Growing up it was the only candy my grandfather was allowed to have, due to the price of the more “traditional” candies.
INGREDIENTS
- 1/4 cup mashed potatoes
- 1 bag (16 oz.) powdered sugar
- 1/3 cup peanut butter
FYI, I did double the recipe just because I wanted to make a bunch for friends and family.
Putting your potatoes in a mixer (or you can hand mix if you’re a braver soul than I), lightly beat them so they’re fluffy little pieces. Slowly mix in your powdered sugar until you have a dough consistency.
Lightly powder a sheet of wax paper or a cutting board, and roll out your dough into a large rectangle shape. Spread a layer of peanut butter to the top of your dough.
Roll your dough into a jelly roll shape and refrigerate for 20 – 30 minutes. Slice into thin pinwheel pieces and serve!
Was that not the easiest candy recipe? Told ya so. What’d you guys think? Pretty delicious, right? Be warned though, I wasn’t kidding about the sugar coma. That’s why I cut my pieces really thin because 1 – 2 pieces will be plenty! PS, how adorable is that bowl? $2.00 at Target! Thank God for clearance!
