Can you believe it’s March already?! 2016 is just flying right by and it will be Christmas time before we know it. But before Christmas rolls around, there are a few other holidays we have to celebrate. Like St. Patrick’s Day.
Even though St. Patrick’s Day isn’t a holiday that I really celebrate, I’m all about food no matter the occasion. While I don’t live a gluten free lifestyle (cue the Oprah Winfrey commercial where she proclaims her love of bread), I have many friends who do. Muddy Buddies are a classic and delicious treat, and now that Chex has 7 options that are gluten free, they can be enjoyed by everyone!
I had been craving some Muddy Buddies, so I headed to the store to pick up my ingredients. While I was there, I picked up some Lucky Charms because I’m an adult. Before I put the box in my cart, I saw on the side that Lucky Charms are now gluten free too! That’s when I had the idea to make some gluten free St. Patrick’s Day Muddy Buddies!
Ingredients
- 3 cups Rice Chex® cereal
- 1/2 cup semi-sweet chocolate chips, melted
- 1/4 cup white chocolate chips, melted
- 1/4 cup peanut butter, divided
- 3/4 cup powdered sugar
- 1/2 cup Lucky Charms
- Green sprinkles
- Green food coloring
Directions
- Place 2 cups cereal in a medium sized bowl and set aside.
- In a small microwavable bowl, microwave semi-sweet chocolate chips, 1/4 cup peanut butter for 30 second increments, stirring in between each until melted and smooth.
- Pour peanut butter mixture over cereal and stir until evenly coated.
- Place the cereal mixture in a seal-able food storage bag and add 1/2 cup powdered sugar.
- Shake the bag until well coated then spread the cereal out on a baking sheet and allow to cool for 15 minutes.
- Place 1 cup cereal in a medium sized bowl and set aside.
- In a small microwavable bowl, microwave white chocolate chips for 30 second increments, stirring in between each until melted and smooth. Add green food coloring and mix well.
- Pour green colored chocolate over cereal and stir until evenly coated.
- Place the cereal mixture in a seal-able food storage bag and add 1/2 cup powdered sugar and green sprinkles.
- Shake the bag until well coated then spread the cereal out on a baking sheet and allow to cool for 15 minutes.
- In serving bowl, mix both cereal mixtures along with the Lucky Charms
- Store the muddy buddies in an airtight container.
This is the perfect dessert for anyone and everyone and for every occasion. No matter if you’re going to a party, watching the parade, or celebrating your cat’s 8th birthday. Wait…that’s probably just what I’ll be doing. ;)
