One of my favorite things to do during the holiday season is to bake. I bake with family, I bake with friends, I bake by myself for family and friends. Baking for the people I love is just a small way to Share Holiday Joy with those around me.
I definitely go into baking overload during this time of year, especially with anything peppermint. Peppermint and Christmas just go hand in hand. While I was brainstorming peppermint dessert ideas, and watching endless amounts of Christmas movies on TV, a Coca-Cola commercial came on. Their Christmas commercials make me oh, so happy and it got me thinking, what if I incorporated Coke into one of the recipes?
I headed to Sam’s Club to pick up a couple things, and saw that they carried Coke in glass bottles. It was perfection. I was going to get some Coke anyways for a party I was throwing (because I’m a Coca-Cola girl, through and through) and it would be even more festive in glass bottles! So vintage, so cute.
These are the Coke de Mexico Coca-Cola, available at Sam’s Club, and are made with real sugar and no high fructose corn syrup. I loved that they came in packs of 24, plenty for my party guests and maybe even some left over for stocking stuffers! While I was there I also saw that they had 4-packs of 2-liter Coke and Diet Coke at a special price of $3.98. I made sure to grab some Diet Coke for my party too.
- ½ cup (1 stick) butter, room temperature
- ½ cup vegetable oil
- 1 cup Coke de Mexico Coca-Cola
- 2 cups granulated sugar
- 2 cups all-purpose flour
- 2 eggs
- ¾ cup cocoa powder
- 1 tsp baking soda
- ½ cup milk
- 1 tbsp white vinegar
- 1 tsp vanilla extract
- pinch of salt
- 1/2 cup butter, softened
- 8 oz. cream cheese, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla
- 1/2 teaspoon peppermint extract
- heavy cream
- crushed candy cane pieces for garnish
- 1. Preheat oven to 350 degrees and fill your cupcake pan with liners,
- 2. Mix together butter, oil and both sugars until light and fluffy.
- 3. Next add the egg and incorporate.
- 4. In a separate bowl, mix together flour, cocoa powder, baking soda and salt.
- 5. Slowly add half of flour mixture and incorporate.
- 6. Next add half of Coca-Cola.
- 7. Incorporate final half of flour mixture and then remaining Coca-Cola.
- 8. Finally, add in vanilla extract and make sure the batter is mixed well.
- 9. Pour the batter into each of the liners, about 2/3 of the way.
- 10. Bake cupcakes for 15-20 minutes or until a toothpick inserted into the center of the cupcakes comes out clean.
- 11. Cool cupcakes to room temperature.
- 1. Whip all ingredients together in a large bowl 3-5 minutes or until smooth and fluffy.
- 2. Put frosting in a piping bag and frost cupcakes with a Wilton #109 tip.
- 3. Top with crushed peppermints.

- paintbrush
- chalk (white and various colors)
- silver pipe cleaners
Instructions
1. Paint the entire bottle with chalkboard paint. Let dry. After it’s dry, draw on a Christmas tree. You can either do a “classic” white chalk or a “festive” colored chalk.
2. Take your silver pipe cleaner and form a star. Wrap around the neck of the bottle and give to anyone on your list!
