Alright, so fun fact about me; I love to bake. Love, love, LOVE. Seriously, in high school, it’s what I was known for. I mean, can we talk about the cuteness overload of these penguin cupcakes?
So cute.
The thing is though, I haven’t baked in quite a long time. Sure, I’d make the occasional cookie or brownie for a small get together, but it wouldn’t be like anything I used to make. I would spend hours in the kitchen trying new recipes and creating new ones.
With Valentine’s Day coming up I wanted to make something that would be perfect for celebrating with your special someone or getting together with friends.
A couple days ago, I came across this recipe and knew I wanted to try it out. It just sounded delicious. But I wanted to make it a little easier for those who aren’t baking aficionados or who (like me) wanted to use up things in their pantry.
Cookie Bar Ingredients
- White Cake Mix
- 3 Eggs
- 1/3 Cup Oil
- 1 Teaspoon Cornstarch
- Multi Colored Sprinkles (optional)
Frosting Ingredients
- 3 ½ Cups Powdered Sugar
- 2 Tablespoons Milk
- 1 Teaspoon Vanilla Extract
- ½ Cup Butter (softened to room temperature)
- Food Coloring (color up to you!)
Directions
- Preheat your oven to 350o.
- In a mixing bowl, combine all dry ingredients. Mix in oil and eggs until well combined. Most cake mix to cookie recipes only call for 2 eggs, but I wanted my bars to be moist and fluffy and that extra yolk does the trick. Same goes for the bit of extra cornstarch. They’re going to be sooooo soft!
- If you want sprinkles in your dough, now’s the time to add them. And I truly think you should. Sprinkles make the world go round.
- Take a foil lined 9 x 9 pan and spread your dough out from corner to corner.
- Bake at 350o for 20 – 25 minutes (mine were good at 22).
- While they’re baking, you can whip up the frosting. In a mixing bowl, beat the butter with a mixer for about 30 seconds, until smooth. Add in the powdered sugar 1 cup at a time. Add in the vanilla extract, milk and 3 drops of the food coloring of your choice and mix until light and fluffy.
- Once your cookie bars are done baking comes the hard part, waiting. Seriously though friends, you want to wait until the cookies are COMPLETELY cool to add your frosting.
- Once they’ve sat for a while, slather those bad boys with the frosting and top with sprinkles!
Creating these really made me realize how much I missed spending time in the kitchen. Because I enjoyed doing this so much, I’m going to attempt to have a recipe on here once a month for you guys to try out. Sound good?
