It’s September and while the official first day of fall isn’t until next Thursday, I am all about getting in the spirit of the season early. Heck, who am I kidding? If you know me at all, you know that fall is my favorite time of year so I have been ready for fall since April. ;)
Pumpkin Spice is the definition of fall and it’s smell is heavenly. While pumpkin on it’s own is not a favorite of mine, pumpkin spice is a whole other thing. Again, the smell is awesome (which is why I made these Pumpkin Spice bath bombs last year) and I love that fall-y spice flavor, which is why I created this recipe for you today.
I was in a baking mood and I wanted to do something fall-ish, but it’s still pretty hot weather wise. And my house doesn’t have air conditioning. So involving the oven was a big fat no-no. These Pumpkin Spice Rice Krispie Treats are a delicious no-bake fall treat that are sure to be a hit. (Seriously, ask my co-workers. I took them to work and the pan was empty before 10am.)
P.S. I ended up doubling my recipe because they were pretty thin and measly when I put them in the pan the first time. If you want less, just divide it in 2 for the original recipe. :)
Supply List
· 1 box rice krispies
· 8 cups mini marshmallows
· 6 tbsp. butter
· ½ cup pumpkin
· 1 tsp. cinnamon
· 1 tsp. pumpkin pie spice
· ¼ cup cream cheese frosting
· Autumnal sprinkles (optional)
Instructions
1. Place your mini marshmallows into a microwave-safe bowl and put your butter on top. Microwave for 30 second intervals until smooth.
2. Add your pumpkin, cinnamon, and pumpkin pie spice to the marshmallow and stir until blended.
3. Place your rice krispies into a bowl and pour the marshmallow mixture over. Stir until all of the rice krispies are coated.
4. Pour the pumpkin spice rice krispies into a 9 x 13 inch pan and refrigerate for 30 minutes.
5. Place your cream cheese frosting into a microwave-safe bowl and microwave for 20 seconds. Let somewhat cool.
6. Take your pumpkin spice rice krispie treats out of the fridge and put your melted frosting into a plastic ziplock bag. Snip a small piece out of the corner and slowly drizzle it over your rice krispies.
7. This step is optional, but it makes it so much more fall festive. Grab some autumnal sprinkles (I got mine from Michaels), and sprinkle away!
These are the bomb . com! They do have a bit if a different texture than regular rice krispie treats, but that’s because the marshmallow becomes extra gooier when you add the pumpkin. I’m gonna have to try and experiment to get the perfect rice krispie to marshmallow / pumpkin goo ratio.
