Hi friends,
So we’ve been a little spoiled here in PA, and the weather hasn’t been that bad. Until recently. Recently it’s sucked. It’s been cold and dreary and … cold. Yes, I know I said cold twice.
With it being cold and dreary, all I want to do when I get home is change into PJs and crawl into bed. The last thing I want to do is take the time to make an actual dinner. Enter the Crockpot! AKA my wintertime best friend.
There is absolutely nothing better than coming home to already having dinner ready for you. One recipe that I love this time of year is crockpot chili, especially over macaroni. It warms you to the core and is perfect for any game day celebrations.
- 2 lbs ground beef
- 2 cans tomato paste
- 1 can diced tomatoes
- 1 1/2 cups chopped onions
- 1 gloves garlic, minced
- 1/4 cup bell pepper
- 1/8 cup chili powder
- 1 beef bullion cube
- 2 cups water
- 1 can pinto beans (optional)
- 1 can kidney beans (optional)
- 16 oz. macaroni noodles
- Sour cream
- Cheddar cheese
- 1. In a skillet, heat ground beef until cooked through. Drain excess grease and set aside.
- 2. In a slow cooker, combine all ingredients. Stir and set on low for 8 hours until ready to eat.
- 3. Cook macaroni according to package directions. Drain and top with chili.
- 4. Serve with sour cream and shredded cheddar cheese.
Now, you may be wondering why the beans are an optional ingredient. Well, I don’t like beans. So there’s that. Also, traditional chili doesn’t have beans in it. But I know a lot of people do like them, so feel free to add them. :) And this recipe is so delish, you will absolutely be clearing your plate!
